Valencia Creek Farm Olive Oils
Late each fall we harvest olives by hand, picking only when the fruit has ripened to the combination of green, straw, red, purple and black that will yield the unique flavors for our blend.
At the mill, the olives are crushed and the oil extracted using a two-phase process. Stainless-steel belfustos hold the unfiltered oil until the olive solids settle, after which the oil is decanted and ready for bottling.
Colline di Santa Cruz oil is certified as extra virgin by Baker Labs in Paso Robles, CA, and by the California Olive Oil Council, whose panel of tasting experts declare it free from defects and rate the flavor based on International Olive Oil Council standards.
Store your olive oil in a cool, dark place. Once opened, oxygen will also slowly affect the flavor, so purchase a size that you will use within a month or two.
